Butternut Snap Cookies Recipe

Butternut snap cookies were invented in Australia, I think. Unlike ANZAC Cookies and pavlova whose origin is disputed since both New Zealand and Australia claim to have invented it, the case for butternuts is clearer since New Zealand is not claiming it invented these cookies. 

Butternut snap cookies get their name from butter and coconut. They are similar to ANZAC Cookies except butternuts contain eggs and don’t contain rolled oats. They are lighter. Even though it is called butternut, very little butter is used but the butter taste is present for sure. Its almost a diet version of   ANZAC Cookies!

The recipe requires cream of tartar and bicarbonate of soda. A substitute for cream of tartar is lemon juice. However I didn't want to use lemon and used baking powder instead of cream of tartar and bicarbonate of soda. It worked fine.

Butternut snap cookies

Ingredients
2 tablespoons butter
¾ cup sugar (original recipe suggests 1 cup)
1 egg
½ teaspoon cream of tartar
1 teaspoon bicarbonate of soda
Pinch salt
1½ cups flour, sifted
½ teaspoon vanilla essence
1 cup desiccated coconut
2 tablespoons golden syrup
1 tablespoon milk

Directions
  1. Preheat oven to 360°F / 180°C
  2. Cream together all the wet ingredients and sugar
  3. In a separate bowl mix together the rest of the ingredients
  4. Add the dry ingredients to the wet ingredients and mix until incorporated
  5. Place small balls on a baking tray, flatten and bake until golden brown and delicious, about 10- 12 minutes.

    1. I understand. When I lived in NZ, I called it biscuit. Now it feels weird calling it biscuit. But whatever word we use we are referring to the same delicious concoction. Hopefully in future the world will unite and agree on a common term - whether cookies or biscuits.

  7. Butternut cookie is fine but an ANZAC is a biscuit. It was created when the world was united to fight a war. It's historical and cultural significance should not be diminished by an incorrect name

  10. Yeah, it's biscuit. This is the sort of biscuit you would have with tea, and it's tea and BISCUITS not tea and COOKIES.
    To me, "cookies" means "breasts" and always has when I hear someone use it lol.

  13. They are Anzac BISCUITS. That is what the Anzacs called them so please call them what they are, biscuits, out of respect for those whom they were named after. Why change the original name? If it ain't broke don't fix it. Surely Australians are entitled to keep some originality, our history, our identity without it being twisted, tapered with or distorted.
